These cookies have a perfect balance of crispy edges and a soft, chewy center. If you bake them a bit longer you can have a crispy cookie rather than a chewy one. I prefer my cookies crisp, so I bake them a bit longer.
The dough will be stiffer than traditional cookie dough. My family does not notice a huge difference in flavor with einkorn flour, just a tad more sweetness. They do notice a bit of a difference in the texture, baked goods are usually just a bit more chewy.
Ingredients:
- 1 cup butter, softened
- 3/4 cup granulated sugar
- 3/4 cup brown sugar
- 2 1/4 cups einkorn flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1 egg
- 1 cup chocolate chips (I used dark chocolate chips)

Instructions:
- Preheat your oven to 375°F (190°C)

- 1 tsp baking soda
- ½ tsp salt
- 1 tsp vanilla extract
- 1 egg
- 1 cup chocolate chips I like dark chocolate chips
Instructions
- Preheat the oven to 375℉. Cream together the butter and sugars, add the egg and vanilla and mix well. Sift together the flour, baking soda, and salt, mix in with the wet ingredients. Stir in the chocolate chips.Scoop out onto ungreased or parchment-lined baking sheets. Bake at 375℉ for 9 minutes, or longer if you want them crispier. Cookies are done when edges are dark golden brown and the tops are a light golden brown. Enjoy!
