Einkorn Chocolate Chip Cookies

Delicious rich chocolate chip cookies that are easy to put together and so yummy!

Servings 2 dozen

Equipment

  • 1 stand mixer or hand mixer
  • 2 baking sheets

Ingredients
  

  • 1 cup butter
  • ¾ cup granulated sugar I use organic evaporated cane sugar
  • ¾ cup brown sugar
  • cup Einkorn Flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 tsp vanilla extract
  • 1 egg
  • 1 cup chocolate chips I like dark chocolate chips

Instructions
 

  • Preheat the oven to 375℉. Cream together the butter and sugars, add the egg and vanilla and mix well. Sift together the flour, baking soda, and salt, mix in with the wet ingredients. Stir in the chocolate chips.
    Scoop out onto ungreased or parchment-lined baking sheets. Bake at 375℉ for 9 minutes, or longer if you want them crispier. Cookies are done when edges are dark golden brown and the tops are a light golden brown.
