Why Make Your Own Ice Cream
What I love about making my own ice cream is that I know exactly what’s in it. No artificial sweeteners or colors. Not high fructose corn syrup or excessive sweeteners. Just natural fresh ingredients that we can get here on the farm.
I know not everyone has the opportunity to keep a cow or chickens. If you don’t have your own, do your best to source these ingredients locally. Ask around and I bet you could find someone with a milk cow or their own flock of chickens. Buy your milk and eggs from them or check out your local farmers market!
Ingredients for Homemade Chocolate Ice Cream
- 2 cups raw milk
- 2 cups cream
- 8 egg yolks
- 1/2 cup sweetener
- 1/4 cup cocoa powder
Steps for Making Old-Fashioned Chocolate Ice Cream
This really couldn’t be simpler. The most tedious part is cracking and separating the eggs. Save the egg whites to make an angel food cake or meringue cookies. Or you can just add some to your scrambled eggs in the morning to get some additional protein!
First, make sure your freezer bowl for your ice cream maker is frozen. Next using a blender or stand mixer thoroughly mix all the ingredients until the cocoa powder is fully incorporated.
Next, pour the batter into the frozen bowl of the ice cream maker and follow the manufacturer’s instructions for making ice cream.
Can You Make Ice Cream without an Ice Cream Maker?
You actually can. I used to use this method back when I was a young mom and we had no extra money. Simply put the blended milk and cream mixture in a shallow baking dish. Place it in the freezer and stir it scraping down the sides every 30 minutes or so for the first few hours. Then let it firm up in the freezer for about 8 hours.
Which Ice Cream Maker Do You Use?
Good question! I wish I had the money and space for a professional soft-serve machine in our home! Wouldn’t that be something? In lieu of that, I have chosen a countertop ice cream maker. I went with Cuisinart because I had seen several people recommend them and honestly they seem to have the most options! I love that you don’t have to use rock salt and ice and make a big mess. By the time I bought ice and rock salt, I wasn’t sure it was all that economical.
If you don’t mind the mess of rock salt and ice and you like the old-fashioned feel of that, I also have this ice cream maker from Nostalgia. It makes a nice generous amount of ice cream!
The main drawback with the countertop ice cream makers is that they only make 2 quarts. This is a problem for our large family. The answer is to have an extra freezer bowl, that way you can make a batch and then quickly make another one. It only takes 15-25 minutes to make! I have really enjoyed using it!

- 1 Blender or Mixer Not 100% necessary but very helpful
Ingredients
- 2 Cups Raw Milk
- 2 Cups Cream
- 8 Egg Yolks
- ½ Cup Sweetener I use Organic Evaporated Cane Sugar Raw sugar, honey, maple syrup or even dates can be used.
- ¼ Cup Cocoa Powder
